Cupcake Recipe!

First of all, sorry there hasn't been a new post in so long!  I was really busy coming up to my college graduation show but I have officially graduated from The College of Dance so hopefully things will return to normal and there will be at least one new post a week again.
Anyway, onto the post!

This is a super simple recipe that makes about 12 cupcakes.

Ingredients


175g self raising flour
150g soft margarine
150g caster sugar
3 eggs
2 or 3 drops of vanilla essence

 

For the Icing


25g soft unsalted butter
Icing sugar
A few drops of food colouring of your choice

 

Method


- Preheat the oven to Gas Mark 4/180°C/350°F

- Sieve the flour into a large mixing bowl

- Add the sugar and margarine

- Crack the eggs into a mug or small bowl and after removing and bits of shell, add them to the bowl

- Whisk everything together and then add the vanilla essence

- Using two spoons (one for scooping and one for scraping), put the mixture into cupcake cases on an oven tray

- Bake the cakes on the middle shelf for about 25-30 minutes.

- When the cupcakes are golden brown and cooked all the way through (use a skewer or knife to check) put them on a wire tray to cool.

-  While the cupcakes are cooling make the icing by mixing the butter with as much icing sugar as you need to get the right texture.  Add the food colouring drop by drop until the icing is your desired colour.

-  Use a piping bag to ice the cakes (if you don't have one, click here to learn how to make one at home!).  Make sure they have fully cooled down first or the icing will melt!

- The very last and most important step: Eat the cakes!
